Even within West Indian cuisine, there are distinct regional influences, with individual styles arising out of several states, including Gujarat, Maharashtra, and Rajasthan. Maharashtra’s coastal location is responsible for its fish and coconut milk-dominant cuisine. Gujarati cuisine is mostly vegetarian.
Goa has a unique blend of Indian and Portuguese culinary elements. The north-eastern states have a different and distinct food habit from rest of the Indian states. These are also the most organic and the healthiest that the Indian platter offers, with minimal use of oil and spices.
